Like the nature, music and people of the Black Sea, its food is unique. The geographical structure and climatic conditions of the Black Sea determine the character of food specific to this region. Corn, beans, black cabbage, local herbs and, of course, anchovies are among the Decadent delicacies of the regional cuisine.
Ingredients
400 GR. ORZO PASTA
300 GR. CLEANED ANCHOVIES
30 GR. RAISIN
50 GR. BUTTER
1 BUNCH OF PARSLEY
1 MEDIUM ONION
CORNFLOUR
2 TBSP OF PINE NUTS
1 LEMON
Directions
Finely chop the onion. Saute in a pan with butter. Cook the pasta in boiling water, drain it, and then put it into the pan. Roast the pine nuts in another pan and add them to the pasta. We add parsley and raisins (that have been kept in warm water) and mix it to the pasta. We grease the inside of the small baking dish, dip the anchovies in cornflour and put them in the baking dish. We put the prepared pasta on top of the anchovies and cover it with anchovies. Bake it in the oven at 180 degrees Celcius for 20 minutes, remove from the baking dish and serve with slices of lemons.
